On game-day, these fried Mac and Cheese Triangles give your guests something to fight over beside whose team is going to win the game. Make lots as they disappear fast or combine with some Fried Lasagna Appetizers .
Make the triangles ahead and freeze them. On game day, defrost and fry before the kickoff. Pop them in the microwave or oven before serving. Heat until the cheese is hot and melted. Now, you won't be stuck in the kitchen instead of cheering for your favorite team.
Make The Mac and Cheese Casserole.
Mac and Cheese Casserole is a quick and easy dish to make. Be careful, though, or you will be tempted to eat it before it's made into the triangle bites. However, use this recipe and make two 9 X 13-inch pans. That will be enough for dinner, and still have a pan left-over for the triangles.
Cook a pound of elbow pasta, add butter, half and half, eggs, and lots of cheese. Four kinds of grated cheese, plus Velveeta cheese. The half and half, and all that cheese, makes this dish extra, extra creamy, and cheesy. YESS!!!
Bread The Fried Mac and Cheese Triangles.
Remove the chilled mac and cheese from the pan and cut into 2-inch squares. Then cut each square on the diagonal to form 4 bite-size triangles.
Bread the triangles using a 3-stage breading. Coat each triangle with flour, then egg, and finally breadcrumbs. I use 3-stage breading any time I need to bread food before frying. If you make chicken nuggets or chicken fingers, this breading makes the absolute best chicken nuggets or fingers ever.
Fry the Fried Mac and Cheese Triangles.
The triangles are the best deep-fried. Use a deep fryer or fry pan. You will need a minimum of an inch of oil in the pan. Fry the triangles in small batches of four or five. Reheat the triangles 10 to 15 seconds in the microwave just before serving. A large quantity can be reheated in a 400-degree oven for four to five minutes.
Chill, enjoy the game and watch them disappear.

Ingredients
Mac and Cheese Casserole
- 1 lb macaroni elbows
- 1 stick butter melted
- 1 cup cheddar cheese sharp grated
- 3 cups Shredded Mexican cheese blend (see notes)
- 10 ounces Velveeta cheese cut into small cubes
- 1½ cups Half and Half
- 2 eggs beaten
- salt and pepper to taste
3-stage breading mix
- 1 cup flour
- 4 eggs beaten
- 2 cups bread crumbs plain
- oil for frying
Instructions

preheat oven to 350°.
Mac and Cheese Casserole

Cook the pasta in 3 quarts of salted boiling water until the pasta is al-dente, about six minutes. Drain in a colander and run under cool water to chill. Transfer to a large mixing bowl.

Melt the butter and mix it into the pasta. Add the cheeses and stir to mix in.

Add the eggs to the half and half, whisk to combine, and pour over the macaroni and cheese.

Add salt and pepper to taste. Stir to mix well.

Split the pasta between two 9 X 13-inch baking pans. The pasta should be about one to 1½ inches deep.

Cover with aluminum foil and Bake 350° F for 35 minutes. Cool to room temperature and chill in the refrigerator for 3 hours or overnight.
Breading and Frying

Put the breading ingredients into 3 separate shallow containers.

Remove the chilled mac and cheese from the baking pan and cut it into 2-inch squares. Cut each square on the diagonal into 4 triangles.

Bread each triangle by coating it first with the flour, then the egg, and last with the bread crumbs.

Put 1 inch of oil in a fry pan or use a deep fryer. Heat the oil to 350°F. Keep the oil at or slightly less than 350° to prevent the triangles from over-browning before they are hot in the center. Deep-fry the breaded triangles until they are a golden brown, about 1 - 2 minutes. Fry in small batches of 4 to 5 triangles at a time.

Serve hot. If the triangles cool down, reheat them just before serving in the microwave or oven until the cheese in the middle is hot and melted. (see notes)

Notes
Mexican cheese mixture: This mixture is a mix of cheeses that are creamy, smooth, and semi-soft. They melt beautifully in the mac and cheese. Varieties include Monterey Jack, queso quesadilla, and queso asadero.
Salt and pepper to taste: The cheese is salty, and the macaroni was salted when cooked. I don't add extra salt. If you add pepper, don't add more than 1/2 of a teaspoon.
The triangles can be frozen before breading on a cookie sheet and then stored in a ziplock bag for up to 2 weeks. Alternately, they can be breaded and then frozen. Defrost for 30 minutes on a parchment-lined cookie sheet before breading or frying.
Use an instant read Thermometer to monitor the oil temperature.
